Mocha Protein Smoothie

I’m not a big protein shake girl, it’s never really been my thing. So when I got a sample of body logix’s chocolate vegan protein powder, I just stuck it in my drawer. Fast forward to these past few weeks where I’ve been training for a half marathon and it has been really interesting finding just the right kind of breakfast to get me going before my run. It can’t be too heavy or I won’t feel well and it can’t be too light or I won’t run as long as I need to, so a protein smoothie seemed like it just might be right! I jazzed this one up by adding flaxseed meal and even snuck in some kale, of course.

Mocha Protein Smoothie
1 serving size of chocolate vegan protein powder ( I used bodylogix and it tasted good. It’s also soy free, dairy free, non gmo and has no artificial flavors. They DID NOT pay me to say this! haha)
1 frozen banana (but a regular one will do)
1/2 cup almond milk
1/2 cup coffee
2 tbsp flaxseed meal
1 cup of kale ( or just two handfuls of kale)
4 ice cubes

Blend it all together and enjoy! You can also add dates to make it a little sweeter but I’m off the sugar right now so that’s why I didn’t.

HEALTHY LATE NIGHT SNACKS

It’s late, I’m tired but I’m still hungry and I hate going to bed with my tummy grumbling! Can you relate? I bet you can. Late night snacking can be a real diet enemy! You’re good all day, eating healthy, delicious meals and then midnight rolls around and you’re still working or just out with your friends, hunger strikes and you’re just too tired to make a good, healthy choice! Eating junk late at night is not only sabotaging your healthy daytime diet but it can leave you feeling gross and bloated when you wake up the next morning! Here’s a little tip video I put together for you guys so that you can be prepared for those late night cravings, keep these snacks on hand and you can go to sleep with a happy tummy and wake up being really glad you didn’t ruin your diet!

Chocolate Raspberry Vegan Protein Shake

After my morning workout today I was really craving something cold and fruity! So I decided why not use some of the great products I sampled last night at NYC’s food fete and whip up something yummy! Combining So Delicious’s chocolate coconut milk and Manitoba Harvest’s hemp protein powder for a protein packed, craving satisfying, sweet breakfast treat! And the best part is that it takes only minutes to make!

Chocolate Raspberry Protein Shake

4 tbsp of Manitoba Harvest hemp powder
1 cup So Delicious chocolate coconut milk
1 cup frozen raspberries
Half a tray of ice cubes

Blend and enjoy! You can add bananas, strawberries or whatever you’d like as long as your base is the hemp protein and coconut milk, you’ll still get a wonderful animal product free dose of protein!

Gluten Free Hot Cocoa Cupcakes

If you’ve been keeping up with my youtube channel www.youtube.com/user/gosweetandskinny you’ll notice that I made these for my CBS baking show tape and they came out fabulous! I also got a gluten free request recently so I wanted to post a sample gluten free cupcake! It was really easy for this cupcake because I simply used garbanzo been flour which is gluten free and I was actually much happier with the results than when I just by plain “gluten free flour” at the health food store. I thought these we’re adorable because we’ve gotten quite the cold spell in NYC the past couple weeks and I’ve got hot chocolate on the brain! Slight disclaimer about the picture, marshmallows tend to not be vegan unless you actually by specifically vegan marshmallows! 

 

GLUTEN FREE VEGAN HOT COCOA CUPCAKES!

2 cups of Garbanzo Bean Gluten Free Flour

3/4 cup of unsweetened cocoa powder  (or your favorite vegan hot choc!)

1/2 cup cane sugar

2 tsp of baking powder

2 tsp of baking soda

1 tsp salt

1/2 tsp cinnamon ( I also like to add 1/2 tsp of nutmeg or pumpkin pie spice to give it a little extra kick)

1/2 cup vegetable oil

1/2 cup agave

4 oz of unsweetened apple sauce

2 cups of chocolate soy milk (which you’ll add 2 tsp of apple cider vinegar to)

1 tbs of vanilla extract and 1 tsp of almond extract (optional)

Pre heat your oven to 350 and stick your cupcake liners in your pans. I always bake using mini cupcake pans because I love the portions of the tiny cupcakes!  Next, add your apple cider vinegar to your chocolate soy milk in a separate  bowl/measuring cup and combine all your dry ingredients in your bowl or mixer. Now, add oil, agave, apple sauce and extracts to the dry ingredients. Pour you slightly curdled soy milk in to the bowl and proceed to mix for about 30 second in a stand mixer or a couple minutes by hand till the mixture is the consistency of regular cake batter but not a second longer! You don’t want to over mix if possible. At this point, I have a mini sized ice cream scooper that I use to evenly scoop the batter into the cupcake holders but a tablespoon will work as well.  Watch them while they’re baking – depending on their size will depend how long they need to stay in. Use a toothpick if your unsure if it’s done!

As I said before, marshmallows are a great little touch if your not concerned about it being vegan or if you can get your hands on vegan marshmallows but if not, I like to just dust a little cocoa powder over the top of the icing. For the baking show video I even piped the icing to look like a dollop of whipped cream! Have fun with it!

LOW FAT MINI COOKIE CUPCAKES

 

cookiecupcakesHow cute are these little baby chocolate chip cupcakes?! Can you believe they’re low fat too?! Well not only are they low fat and adorable, they are also part of my kick off into my “brainless baking” segments on our youtube channel! Since I know we’re all not little betty crockers in the kitchen like myself – I’ve decided to spend a little time creating easy peasy LOW FAT recipes that anyone can make from the boxes in their local supermarket’s baking needs section! This way not only are you making healthier versions of your favorite goodies but maybe I can even show you a few things to impress your friends and co workers with your kitchen skills! Don’t worry it’ll be our little sweet and skinny secret! Anyways, while experimenting with some concoctions, I got a little hungry and made these little chocolate chip cookie cupcakes!!

 

LOW FAT CHOCOLATE CHIP COOKIE CUPCAKES

All you need is a bag or box of chocolate chip cookie mix from your local supermarket, one egg, a small applesauce cup and half the amount of butter required from the recipe!

Preheat your oven to 375 degrees. Simply place the mix in a bowl, crack one egg and decide whether or not you want to use all applesauce or go half and half and use half the butter! Don’t beat yourself up if you want to use half the butter, in fact, I recommend it if your not used to low fat baked goods. It’s better to ween yourself off the usual stuff then to jump into a drastic change you might be turned off by. Now use all your apple sauce regardless of if you decide to use some of the butter. If your only using apple sauce, feel free to add about 2oz more if you’d like but it’s not necessary. The applesauce is going to make these more cupcake-y than cookie like, FYI.

So mix it all together, it should be a clumpy cookie dough like consistency. Get out your mini muffin/cupcake pan and spray it with a non stick cooking spray or use mini cupcake holders if you prefer. Use a mini ice cream scooper or a tablespoon to spoon the dough equally into the molds. Bake for 5-10 minutes while watching frequently to make sure you don’t over cook them!

I hope you enjoy these yummy baby chocolate chip cupcakes as much as I do, I won’t tell anyone how easy they were to make. ;)

GoSweetandSkinny at Smorgasburg this Saturday!

I am so thrilled to announce that you fabulous New Yorkers and Brooklynites can come out this Saturday and take home some delicious gosweetandskinny goodies to enjoy! In an out of this world collaboration with my brilliant ice cream scientist buddies at Alchemy Creamery we have created some vegan chocolate magic wands! Also known as cake pops covered in ice cream. The picture above is one of the adorable vegan chocolate centers of these magical creations but keep eye out on twitter for a pic of the finished product! I hope you can come share in the fun tomorrow down on the water in Williamsburg at Smorgasburg! Happy National Chocolate Chip Cookie Day!

           How can I not post a delicious Vegan Chocolate Chip cookie recipe in honor of such an important holiday?! In other news, is there a national cupcake day? And if not, can we make it February 24th (my birthday)? Ok, Thanks. On wards to the cookies..

Your Vegan Mama’s Chocolate Chip Cookies

I found this yummy recipe in a wonderful book called “Vegan Cookies Invade your Cookie Jar” by Isa Chandra Moskowitz and Terry Hope Romero but feel free to play around with it because we all know I’m going to! ;)
1/2 cup brown sugar

1/4 cup white sugar

2/3 cup canola oil

1/4 cup unsweetened almond milk

1 tbsp tapioca flour

2 teaspoons pure vanilla extract

1 1/2 cups all purpose flour

1/2 teaspoon baking soda

1/2 teaspoon salt

3/4 cup chocolate chips

 

Start by preheating your oven to 350 degrees and lightly greasing your two cookie sheets. Next, combine your sugars, oil, milk and tapioca flour in a mixing bowl. Mix very well (it should resemble caramel when it’s done) now add the vanilla. Finally, add in 1 cup of flour, the baking soda and salt – then mix in the rest of the flour. Fold in your chocolate chips, get in there with your hands because the dough will be a little too hard to mix at this point. Then voila! Roll your dough into little 2 inch balls and palm flatten on your cookie sheets. They should bake for around 8 minutes but use your good judgement.

I should probably say let them cool ten minutes before you eat them but I’m way too big of a fan of just baked, ooey gooey, stomach ache chocolate chip cookies so I’m not going to be a hypocrite here – eat ‘em however you like! :)

Double Chocolate Cherry Cookies

In case you haven’t already noticed with some of the other recipes on this site, there is not much I enjoy more than pairing a nice sweet fruity something with my old chocolate favorites and this is a delicious example of that past time! Double Chocolate Cherry Cookies are probably as good as a cookie could get for my tastes. I’ve also added some dried cherries to a plain dark chocolate chip cookie recipe before with fabulous results, so feel free to get creative with it! For this recipe, you can mix in some chopped nuts or substitute the cherries for another dried fruit like cranberries or strawberries. You might want to double this recipe, cookies this scrumptious are bound to go fast!

Double Chocolate Chip Cookies

basic dough recipe

2 1/2 cups garbanzo bean flour
3/4 cup agave
1 egg or substitute w flaxseed or alternative replacement
2 tsp. vanilla extract
1 cup apple butter
pinch of salt

1/4 cup unsweetened cocoa powder
12oz. of carob chips or semisweet vegan chips
1/4 cup dried sour cherries

Preheat the oven to 375 degrees. Line 2 cookie sheets with parchment paper. Prepare the basic dough recipe, adding the cocoa powder to the dry ingredients. Add the chips and cherries last. Using a tablespoon, scoop dough onto sheets and flatten slightly. Bake 12 to 15 mins and let them cool.

Ooey Gooey Low Fat Vegan Brownies

Last night on Manhattan’s Upper West Side, my friends and I had quite a feast. Perfectly grilled salmon, steamed spinach, bean salad and couscous, oh my! Naturally, I felt it was only right to contribute by whipping up some kind of low fat vegan dessert! We were all in a chocolate kind of mood and it had been a while since I had made brownies, so off to whole foods I went in the rain to gather up some healthy yet tasty ingredients! Here’s what I came up with and (if I do say so myself) they tasted amazing and you could hardly tell they were good for you!

 

Ooey Gooey Low Fat Vegan Brownies

1  1/3 cup of whole wheat flour

2 tsps of flax seed meal whisked with 6 tsps of water

1 cup of amber agave

1 individual cup of unsweetened applesauce

3/4 cup of unsweetened cocoa powder

1 tsp of vanilla extract

1/2 tsp of Baking Soda

1 jar of stage 1 prune baby food

1 cup of vegan chocolate chips

* fresh strawberries, optional

 

Preheat your oven to 350 degrees F. Spray your pan with a non-fat cooking spray. Combine baking soda, cocoa powder and applesauce. Add agave, prune baby food and vanilla extract. Prepare flaxseed meal and water separately and only combine to batter after it’s been whisked together. Stir in whole wheat flour and let the mixture thicken as you mix it in. Gently fold in the vegan chocolate chips and spread evenly in your baking pan. I, personally, enjoy putting fresh fruit in anything chocolatey so I thinly sliced strawberries and covered the top of the brownies with them. Bake for 20- 30 minutes, checking periodically depending on the size of your pan.

 

Enjoy! These brownies are delicious and guilt free, just try to not eat them all in one sitting! ;)
