Green GOODNESS Smoothie Bowl

The first video will drop tomorrow afternoon and I’m going to let you in on my biggest BREAKTHROUGH of Wanderlust! SO exciting!!

One thing that I am happy about now that I’m home is getting to make myself delicious smoothies again. There’s nothing quite like homemade food after a few days of living off festival food, albeit pretty damn healthy festival food at that but nonetheless, there is something comforting about my own blender. :)

Here’s the recipe for this EPIC green goodness smoothie bowl I whipped up for breakfast this morning. Enjoy!

Green GOODNESS Smoothie Bowl

1 cup of coconut- almond milk

5 leaves of Romaine Lettuce

1/2 of an avocado

1 cucumber (minus seeds and skin)

1 green apple

1 large tbsp of nut butter

Topped with: chia seeds, hemp hearts and unsweetened coconut flakes

Chia Buckwheat Cereal on SHAPE.com


Need a great, superfood packed, gluten free, sugar free breakfast option!? Look no further. This Chia Buckwheat cereal is not only crazy easy to make ( we’re talking like five minutes and then let it sit while you shower) but it’ll leave you feeling full and give you some good clean energy to start your day right! Chia seeds are packed with good for you omega 3s and buckwheat groats are a surprisingly delicious gluten free options for your breakfast. Oh, it’s also VEGAN! Or as I like to call it, accidentally vegan because it’s not missing any animal products. Feel free to make it your own by choosing soy milk, almond milk or coconut milk as well as topping it with your favorite seasonal fruit. I am obsessed with using berries because they are full of antioxidants, low in sugar and straight up delicious. This chia buckwheat cereal is a great healthy option for those of you who like a hearty breakfast but are watching your weight. Its also a great vegan breakfast option for those of you (like myself) with all sorts of food allergies, it’s hard to find great tasting gluten free, sugar free and dairy free breakfast option so I’m excited to share it with you guys!

Vegan Pumpkin Balls

These little oat filled treats are great to have around the house if you’re a snacker in need of a healthier option. They are also jam packed with fiber so just one (or two) will keep you feeling satisfied till your next meal. I have to be honest, they are definitely more along the lines of a granola bar kinda deal than they a cookie. You’ve been warned! That said, they are still very delicious. I love having them as a breakfast on the go, I can just throw 2 or 3 in a little zip lock and eat them on my way in the morning.

Vegan Pumpkin Balls
3 cups gluten free oats
1 cup pumpkin puree
1 tsp vanilla
1/2 tsp cinnamon
1 tsp pumpkin pie spice (I use this liberally)
1 tbsp flax seed meal
1 cup of crushed cashews
1/2 cup vegan (or regular if you wish) dark chocolate chips

Mix it all together and then make baby balls and place them on a parchment paper lined baking sheet. Put them in the oven at 350 for about 5 minutes. You just want them to set a little bit, you don’t need them to “bake”. Let them cool and enjoy! Super easy snack and you can sub out the chocolate chips for raisins or craisins or add in dried cherries and really have some fun with it!

Greek Eggplant Tapenade

I love me some eggplant!! This Greek eggplant tapenade is totally vegan, low fat, healthy and wonderfully delicious. I really enjoy making a big batch of this at the beginning of the week and having it for breakfast or a light lunch through out the week on some toasted  ezeikel bread but it’s also great served with crostini at a cocktail party. It’s light yet decadent and totally good for you!

Skinny Greek Eggplant Tapenade

2 small eggplants

1/2  of a (medium sized) red onion, diced

2 garlic cloves, minced

3 branches of fresh parsley, minced

1 branch of fresh oregano, minced

the juice of one lemon

1/3 cup of extra virgin olive oil

3 tbsp of balsamic vinegar

(ezeikel bread or a baguette to slice and toast)

You can use prepackaged garlic, oregano or parsley if you MUST but when possible, FRESH IS ALWAYS BEST! It will just taste, so much better! Preheat your oven to 400 degrees and wash your eggplants and then stab them with a fork all over to give them a bunch of tiny holes all over so they don’t explode in your oven. Place those babies in a casserole pan and stick them in the oven for about 20-30 minutes to roast. The skin should get slightly scorched and that’s totally okay. 

While those little darlings are cooking, get to your cutting board to prepare all your flavoring agents! Dice your red onion, mince the garlic, parsley and oregano and put it in a bowl off to the side. Once your eggplants are done, cut the top with a stem off , slice and chop it into rather small chunks, removing any big seed pockets. Place your chopped eggplant in a large frying pan on medium-low heat on the burner and add your oil. Stir in your bowl of chopped and minced friends and then continue to add your balsamic vinegar. Slice your lemon in half and squeeze out that juice into the mixture! Be sure to keep stirring the eggplant tapenade while adding ingredients. Keep it on the heat till it’s reached your desired consistency (it will get slightly mushier the longer it’s on) and add salt and pepper to taste. I tend to keep it on the burner for another 5 minutes or so, tasting as I go. Enjoy on some toasted ezeikel bread or serve to your friends on a lovely slice of baguette. 

 

 

Sweet Summer Green Smoothie

          I don’t know about you but I’ve been on a HUGE smoothie kick all summer long. Seriously, when we got that crazy heat wave in NY I pretty much lived on smoothies because I couldn’t bare thinking of consuming anything that wasn’t cold and liquid. Smoothies are great for breakfast, I love making one after a workout or yoga sesh in the morning and taking it on the go with me as I start my day! I also confess that I do love smoothie pics on instagram. It’s so fun (for me atleast) to see what other people are concocting up. I mean, I’m sure we all enjoy a little of trial and error with our handy blender but sometimes it’s just nice to make something you KNOW is going to taste good! So when I saw my girl, Sarah, posting crazy yummy looking smoothie pictures and found out that they were made with some of my favorite super foods, well I just had to see if I could share them with all of you! Lucky for you, Sarah is a sweetheart and sent me over recipes and pictures right away! So get excited, this smoothie is total green gloriousness and amazingly good for you! Rev up those blenders…

Sweet Summer Green Smoothie
- 1 layer of kale leaves
- 1 layer of spinach
- 1 in. chunk of ginger peeled and cut up
- 1 cup sliced strawberries
- half of a peach (cut up)
- 1 tsp. flaxseed
- 1 TBS Sunfood Maca Powder
- 1 scoop GNC Lean Shake Key Lime flavor
- 1.5 C almond milk (unsweetened)
And blended along with ice, of course.

Blueberry Oatmeal Protein Pancakes

 

bboatmealpancakes                  Weekends mean one thing to me, BRUNCH! So regardless of where I am or who’s kitchen I have access to, this lady always has some kick ass weekend brunch. This morning was no exception, although I was stuck at my parents with them gone for the weekend and me in total control of the fridge. So after scoping out my options I got a little crafty and whipped up these SUPER EASY to make, crazy delicious and incredibly filling Blueberry Oatmeal Pancakes! I think they’re a super fun, hearty brunch treat with all the fiber, flaxseed and protein you are sure to be full till dinner time but they are a healthy alternative to regular breakfast any day of the week.

Blueberry Oatmeal Protein Pancakes

2 packs of Trader Joe’s instant  whole grain blueberry oatmeal with flaxseed + plant sterols

3 cage free organic eggs

4oz of fat free vanilla or plain yogurt (I used Activa because that’s what my mom had in the house but you can use whatever you prefer, greek yogurt might be even better!)

Mix it all together and spoon it on to a non stick frying pan! This recipe should make three pretty large pancakes or six small pancakes! If you’d like to make a smaller version, I’d use one packet of oatmeal, one egg and 2 tbsps of yogurt! Yum!! Enjoy!

 

Vegan CRACK Bars

And by CRACK, I mean protein but these little suckers are so tasty that they should be considered crack! I literally had to hide them so that I would stop eating them. So bake these in a cookie sheet and then as soon as they cool immediately cut them and put them out of reach or give some to the neighbors, they’re that dangerous.

Okay, now that I’ve got your scared and excited, here’s the recipe!

VEGAN CRACK BARS
Preheat your oven to 350 degrees and get your non stick cookie sheet ready on the stove. In a large bowl combine the following ingredients and then mix gently till they are all solidly stuck together and evenly distributed.

2 cups of oats
1 cup of goji berries
2 tbsp of cashews
3/4 cup all natural peanut butter
3 tbsp of hemp seed
1 tbsp of chia oil
4 tbsp of vanilla hemp protein powder
3 tbsp of maple syrup
1/4 cup almond milk
1/2 cup mini vegan choc chips (I Love ENJOYLIFE! brand)

Next spread the whole mixture the size of the pan so it covers all corners. It should be relatively thin, maybe a 1/2 inch – an inch thick. Bake for 5-10 minutes or until the edges get toasty brown. Let cool, and you’ve been warned what to do once they’re all cooled. ;)

Fruity French Lentils

I LOVE LENTILS! Seriously. In the winter lentil soup is one of my favorite comfort foods and now that it’s hot outside I needed to find a lighter, more summery way to enjoy my lentils! Inspired by a recipe I found in The Kind Diet, these Fruity French Lentils are the perfect way to enjoy my favorite beans all year round! Enjoy these at home with some Cauliflower Steaks and salad or bring them to a barbecue as a great vegan/vegetarian alternative dish. They are sure to be crowd pleasers!

FRUITY FRENCH LENTILS
1/2 cup of lentils
1 cup of water
6 large strawberries, cleaned and chopped
2 tbsp of fresh chopped basil
2 tbsp of fresh chopped parsley
1/2 cup orange juice (I made mine fresh with a juicer)
1/4 cup of balsamic vinegar
a pinch or two of salt

In a saucepan, combine the lentils and water and let boil, mixing the lentils until all the water has evaporated. Chop the strawberries and place them in your orange juice while your lentils cook. When the lentils are finished, drain out any excess water and add in your basil, parsley and OJ’d strawberries. Gently fold the berries in and top it off with your balsamic and salt before your ready to serve. This a delightful light lunch on its own or side dish but can also be combined with some tofu or seitan if you would like something heartier!

Raspberry Key Lime Protein Smoothie

It’s a scorching 90 degrees in New York City today and I was itching for something light and cold for lunch after running around to meetings all morning so I whipped up this delicious and refreshing protein and fiber packed concoction! Give it a whirl this summer!

Raspberry Key Lime Protein Smoothie
1 cup coconut milk
6 ice cubes
1 lime, chopped and skinned
1/2 cup frozen or fresh raspberries
4 scoops of Adonia Key Lime Pie fat free frozen yogurt
4 tbsps of vanilla hemp protein powder (Manitoba Harvest)

Blend it all together and top it off with a lime for a little added festiveness! This delicious smoothie has 10 grams of protein and 10 grams of fiber!

White Truffle Oil Quinoa

This delicious and decadent rendition on skinny super food quinoa is a great on the go snack or lunch during the week as well as a wonderful side dish for any dinner. I personally love putting this under a piece of balsamic glazed salmon! Yummm! Quinoa is SOOO good for you that you could eat it every day and with a little creativity, not get too tired of it. This recipe is so simple, it’s great when you want to make a large batch and take some to work with you during the week or if you just don’t want to be slaving over the oven for hours to make dinner.

WHITE TRUFFLE OIL QUINOA

1/2 bag of baby spinach
1/4 cup of quinoa
1/2 cup of water
2 tbsp of White Truffle Oil
5 or 6 of your favorite mushroom (I used baby bella)

Put your quinoa and water in a saucepan on the stove and boil. Keep mixing around the quinoa till the water eventually dissolves, once your pan is pretty much just quinoa, turn off the burner. In a separate frying pan, drizzle 1 tbsp of white truffle oil and add in your baby spinach and chopped mushrooms. Sautee for a little till spinach has wilted a bit. Now, mix in your cooked quinoa and let it cook for a few more minutes before adding a final tbsp of White Truffle oil to the mix and then serving. Simple and delicious! Enjoy!

Chocolate Raspberry Vegan Protein Shake

After my morning workout today I was really craving something cold and fruity! So I decided why not use some of the great products I sampled last night at NYC’s food fete and whip up something yummy! Combining So Delicious’s chocolate coconut milk and Manitoba Harvest’s hemp protein powder for a protein packed, craving satisfying, sweet breakfast treat! And the best part is that it takes only minutes to make!

Chocolate Raspberry Protein Shake

4 tbsp of Manitoba Harvest hemp powder
1 cup So Delicious chocolate coconut milk
1 cup frozen raspberries
Half a tray of ice cubes

Blend and enjoy! You can add bananas, strawberries or whatever you’d like as long as your base is the hemp protein and coconut milk, you’ll still get a wonderful animal product free dose of protein!

3 Ah-MAZING meatless dinners

It’s that time of the week again where you try to skip your favorite carnivorous meals and live a day in the life of a vegetarian! Once again, I’m here to show you just how easy and delicious it is! So even if you haven’t been meat free all day, why not try a meat free dinner? These three simple recipes I discovered in fitness magazine are mouth watering good any day of the week! Give them a try!

COCONUT CURRY CHICKPEAS AND SPINACH
Combine 1/4 cup coconut milk, 2 cups of frozen spinach, thawed with 3/4 cup chickpeas and a half teaspoon of curry powder in a sauce pan on your stove, stir and cook it through. Serve with 1/2 cup of cooked brown rice!

PUMPKIN QUINOA RISOTTO
In a saucepan on your stove add 1 cup cooked quinoa, 1/4 cup canned pumpkin and 1/3 cup of thawed frozen peas. Stir in two tablespoons of grated Parmesan cheese, one teaspoon olive oil and one tablespoon of toasted walnut pieces. Keep stirring till everything’s warmed and enjoy!

FETTUCCINE AVOCADO
Cook up 1 1/4 cup of whole wheat fettuccine. In a separate pan mix together half mashed avocado, one teaspoon EVOO, one tablespoon chopped basil, 1/2 cup steamed cauliflower florets and 2 tablespoons of toasted pine nuts. Toss with the fettuccine and Bon apetit!

STRAWBERRY CHIA PANCAKES

These quick and easy to make strawberry chia seed protein pancakes are delicious! I literally ate four before stopping to take a picture for you guys! Loaded with good for you chia seeds and sweet strawberries, I can’t think of a sweeter and skinnier way to start your day! These protein packed pancakes are delicious for breakfast, lunch, dinner or even a great low fat snack to help fight that late afternoon hunger. Low fat, low cal and easy to make. Your diet’s already saying thank you!!

STRAWBERRY CHIA PANCAKES

4 or 5 chopped strawberries
1 egg
1 1/2 tbsp of fat free plain greek yogurt
1 heaping tbsp of chia seeds
a dash of agave nectar (optional)
4 tbsp of oat bran

Mix all the ingredients together, adding your strawberries last and then proceed as you would with a normal pancake! Spray some pam or cooking spray into your frying pan and pour some of the batter in and flip when ready. Super easy! Super sweet! These little pancakes taste so good you don’t even need any syrup or butter! FYI, this recipe is for an individual portion so multiply as necessary when eating with others. :)

REVAMP YOUR PEANUT BUTTER

applesnpb                 It comes as a shock to most people when I reveal that I was never a big peanut butter fan. I get this confused and disappointed look on peoples’ faces when I reveal this not-so- secret little factoid. “But why?” “What don’t you like?” “I love peanut butter!” I know, I get it and I’m not trying to insult your favorite nut butter but it just never struck my fancy.  I was just never really into nuts growing up and combine that with all the mixed media messages as to whether or not nuts were healthy or fatty, I just figured it was easier that way. Now as a vegetarian/vegan it’s important to look for other sources of protein to keep you powering through your day so I decided to really try to get into nut butter. My first attempt was almond butter since I enjoy eating almonds a lot more than eating peanuts , I thought this would be a likely winner and I was correct. I quite enjoy almond butter and apples! Victory! However, one faithful day I was at an event and as part of our take home gift bag there was a jar of Peanut Butter and Co’s Cinnamon Raisin Peanut Butter. Well I certainly didn’t want to waste a whole jar of peanut butter so I decided it sounded yummy enough to give it a whirl and boy am I glad I did. I had never thought peanut butter could taste so good! I can practically eat this with a spoon like ice cream – it’s dangerous! The really cool thing about it is that I even compared calories to normal peanut butters and it’s barely anything more. So much deliciousness with out added fat and calories – yippee!

                  For those of you who don’t live in New York City where Peanut Butter and Co’s headquarters are located or have a supply at your local supermarket, don’t fear! This can be really simple and fun to do at home! I bet if you have kids or babysit kids they would absolutely love revamping their peanut butter too! Simply go to whole foods or your local health good store and get all natural peanut butter, the kind you watch get made as you hold down the lever. Now pick up some of your favorite dried fruit or goodies and mix them in when you get home! Raisins and cinnamon are super easy and guaranteed to rock your world but if your doing this with kids they might have fun adding sprinkles or M&Ms to their mix. Another favorite of mine is chopped dried cherries and mini dark chocolate morsels, for a truly decadent peanut butter! Vegan Mexican Dinner

I literally just finished chowing down on this vegan mexican mountain of deliciousness! I’m so stuffed but so pumped to tell you about how you can easily make this little vegan dinner (or lunch) in your own home! I also want to say that EVERYTHING I used in this recipe was okay to eat during my detox, so you could even say this was a vegan DETOX dinner! I know, I’m blowing your mind right now, right? Anyway, I’ve got a wicked weakness for all things Mexican, with guacamole being at the very top of the list so I just knew I had to come up with some way of eating it without those greasy fried chips it always comes with! The quinoa, black beans and tofu provide you with a triple protein punch making this meal satisfying and good for you! You are going to LOVE this dinner whether your vegan, vegetarian or just had a cheeseburger for lunch, trust me.

VEGAN MEXICAN DELIGHT (DINNER)

1/4 cup of quinoa
1/2 cup water
1/2 cup black beans
tofu (I used a slice about the size of a chalkboard eraser and 1/4 inch thick)
adobo seasoning
2tbsp of Olive Oil
2 tbsp of chopped garlic

for the guacamole:
1 avocado
1/2 lime (for juice)
1 tbsp of chopped tomatoes
1 1/2 tbsp of chopped onions
two pinches of salt

It’s pretty self explanatory, put the water and quinoa in a pot and boil it till all the water evaporates and your just mixing quinoa. Then, add your black beans and fold them into the quinoa till they’re heated up. In a separate frying pan add your olive oil and garlic on low heat. Add chopped tofu to the pan and sprinkle with the adobo seasoning. I like to cook my tofu till it’s pretty golden brown but you can do it however you like. Now for the guacamole, in a separate bowl cut the avocado in half and then cut it down and across a few times, take your knife around the skin till all the avocado falls out into your bowl. Add your chopped tomatoes and onions, sprinkle with salt and squeeze your lime. Now just finish it up by folding all the ingredients together! I then take the quinoa and beans and place it down on the plate first, topping it with my sautéed tofu and finishing it off with a nice scoop of the guacamole! It is a vegan mexican masterpiece! (The portions here are for one person, so if your cooking for two just double everything and so on)

Detox Oats and Blueberries

One of the best things about this past week’s detox was learning to incorporate new ingredients in my everyday meals and actually quite enjoying them!! To make my special “Detox Oats and Blueberries” I added a tsp of chia seeds in to the normal oatmeal recipe to spice things up and pump up all the heath benefits. We all know oatmeal is already high in fiber and low in fat and calories making it a diet super star but with a little sprinkle of cinnamon and a dash of chia seeds this simple staple is unstoppable. First, cinnamon is great at curbing sugar cravings (I love adding it to my soy lattes!) plus it tastes pretty good to boot! Then the tsp of chia seeds comes in and provides essential fatty acids that you need to keep your energy up all day. This was especially important during the detox to keep my energy up but hey, I know you have a killer day ahead too so I’m sure you could use that first class energy! Did I mention that chia seeds don’t even taste like anything?! There a little pricey but you only need a sprinkle a day and chia seeds are the richest source of essential fatty acids from plant protein, so vegetarians and vegans especially, go nuts! Here’s my rendition on oats but have fun, use your favorite fruit (or whatever you have in the kitchen) and make it your own!

DETOX OATS AND BLUEBERRIES

1/4 cup quick oats
1/2 cup water
2 tbsp of coconut almond milk (or any non dairy milk)
a bunch of blueberries (i used the whole baby package!)
1/2 tsp of cinnamon
1 tsp of chia seeds

Pretty simple. Boil your oats in water as per normal oatmeal, then once it’s at the right consistency lower your burner to simmer and add your almond milk, blueberries, cinnamon and chia seeds! voila! Healthy, energy packed and low fat breakfast for you!

Thoughts on a Sick Day

Nothing like a sick day or two to leave you overwhelmed with ‘To Dos’! It’s certainly not as fun as it used to be in middle school when sick days were synonymous with Mom waiting on you hand and foot, no school and endless TV watching. Being sick as a grown up is downright stressful and being stressed does not help the healing process! So let me get my apology out of the way, I’m sorry I’ve neglected to post the last few days but I’m back in action now and promise to be back on the horse for your healthy living needs. I did have some interesting sick day revelations that I wanted to share with you and perhaps during this crazy flu season you may have noticed the same and can relate. First, I’d like to point out that when your sick your body only craves what it NEEDS. I’ve been avoiding sugar for the past few days and as soon as I got sick I lost all desire for it. I genuinely could not imagine eating a brownie! Hmmph, could this be because our body inherently knows that sugar is NOT good for us? With my body on high alert all I wanted to ingest was clear liquids – tea,seltzer,water and broth based soups – I could not get enough! Well I think it’s a great a way to realize you should be ingesting more fluids like tea and water on a daily basis, even when your healthy! Our bodies need it and when our system is down for the count it clearly sends important signals to our brains that steer us to more and more liquid medicine.

Secondly, have you ever noticed how after a couple days of laying in bed sick your skin actually looks amazing? I know I tend to get frustrated cause here my skin is looking all great and I still don’t feel quite up to going out and showing it off. Well, in addition to the obvious fact that you’ve been sleeping a lot more than usual and not wearing any make up, the high consumption of tea and water is to thank for this post-illness glow. Can you imagine if you actually consumed that on a regular basis instead of waiting to get sick?

I don’t know about you but my cravings for coffee, diet coke and any other milky or sugary concoction completely disappear when I’m not feeling well and I think that says a lot! Our bodies know what they want, so why don’t we start giving it to them?

HEALTHY COOKIE DOUGH DIP

cookiedoughNope, you didn’t misread that. This is actually a recipe for a HEALTHY cookie dough dip!! Gasp, I know, I’m making all of your little girl slumber party dreams come true right now. If the idea of this grosses you out at all, I apologize, some of us like to embrace our inner fat kid and dig into raw cookie dough from time to time when no ones looking, if this is not you, forward on to the next post about kale chips. For the rest of you guilty pleasure seekers, I experimented with this healthy  ’cookie dough’ recipe I found on “Chocolate Covered Katie” at the Super Bowl this weekend and it seemed to be quite a success. I’ve tinkered with it a bit to give you something that will have a better consistency and taste but feel free to play around and enjoy! COOKIE DOUGH DIP

1 can of garbanzo beans
1/4 cup of almond butter
1/8 of tsp of salt
1/8 of tsp of baking soda
2 tsp of vanilla
4 heaping tblsps of oat bran
1/3 cup brown sugar (feel free to use agave/maple syrup but your dip will be slightly stickier)
1 bag of chocolate chips (or vegan chocolate or carob chips)

Combine all of the ingredients excluding the chocolate chips in a food processor till finely mixed. Fold in chocolate chips or vegan chocolate chips (use about half a bag) and pair with some graham crackers or cinnamon sugar pita chips! Voila! You should never ever need to get a stomach ache from eating raw eggs in cookie dough again and your getting some protein while completely indulging! Your welcome, ladies. ;)
