Green GOODNESS Smoothie Bowl

recipe for this delicious, vegan, gluten free, dairy free and loaded with superfoods, green goodness smoothie bowl.

I just got back from Wanderlust (in Tahoe, CA) and I’m missing it dearly as I edit my video diaries of it for you guys. One thing that I am happy about now that I’m home is getting to make myself delicious smoothies again. Here’s the recipe for this EPIC green goodness smoothie bowl I whipped up for breakfast this morning. Enjoy!

5 leaves of Romaine Lettuce

1/2 of an avocado

1 cucumber (minus seeds and skin)

1 green apple

1 large tbsp of nut butter

Topped with: chia seeds, hemp hearts and unsweetened coconut flakes

green smoothie bowl

delicious, healthy and sugar free raspberry chia seed protein pancakes

After running 13.1 miles yesterday, I was craving a hearty, filling and treat-worthy breakfast. After messing around with some ingredients I had in the kitchen, I whipped up this super easy to make recipe for healthy, raspberry chia seed pancakes that are not only sugar free, they are also PACKED with protein! Woo Hoo! Who says a girl can’t have everything? Enjoy this recipe and feel free to add a little maple syrup or date syrup to sweeten up if you are not “I quit sugar”-ing with me.

healthy sugar free raspberry chia seed protein pancakes

2 tbsp of non fat plain greek yogurt

1/4 cup oat bran

1 organic hormone free egg

2 tsp of flax seed

2 tsp chia seed

a dash of vanilla extract

a dash of cinnamon

6 or 7 raspberries gently broken up (by hand ) into small pieces (and then extra for on top!)

Add everything except the raspberries and mix it up in a small bowl. Heat your pan on low setting and spray with your favorite cooking spray or use a little coconut oil. Add in raspberries last and gently fold them in. Batter should make three 5-6in pancakes (perfect single serving!), feel free to double or triple it when eating with others. I topped mine with some mashed raspberries and a couple whole ones on top!

Great thing about this recipe is that it’s not only easy, quick and contains minimal ingredients but it’s sugar free and has tons of protein thanks to the egg and non fat greek yogurt. Toss in the flaxseed meal and chia seed and we’re also loading up on heart healthy omega-3s while getting a nice dose of fiber with the oat bran! It’s GOOD and good FOR YOU!

Mocha Protein Smoothie

Great recipe for a healthy, mocha protein smoothie. Delicious, packed with protein, superfoods and easy to make in your blender.

I’m not a big protein shake girl, it’s never really been my thing. So when I got a sample of body logix’s chocolate vegan protein powder, I just stuck it in my drawer. Fast forward to these past few weeks where I’ve been training for a half marathon and it has been really interesting finding just the right kind of breakfast to get me going before my run. It can’t be too heavy or I won’t feel well and it can’t be too light or I won’t run as long as I need to, so a protein smoothie seemed like it just might be right! I jazzed this one up by adding flaxseed meal and even snuck in some kale, of course.

Mocha Protein Smoothie
1 serving size of chocolate vegan protein powder ( I used bodylogix and it tasted good. It’s also soy free, dairy free, non gmo and has no artificial flavors. They DID NOT pay me to say this! haha)
1 frozen banana (but a regular one will do)
1/2 cup almond milk
1/2 cup coffee
2 tbsp flaxseed meal
1 cup of kale ( or just two handfuls of kale)
4 ice cubes

Blend it all together and enjoy! You can also add dates to make it a little sweeter but I’m off the sugar right now so that’s why I didn’t.

A Healthy Shamrock Shake

healthy shamrock shake recipe aka mint chocolate chip smoothie recipe for when it's not st. patrick's day!

For those of you who love being festive with your food as much as I do, here is a fun little smoothie you can whip up in the morning to show off some Irish pride! It’s also equally delicious, if you just need to satisfy a mint chocolate chip milkshake craving.. ;)

A Healthy Shamrock Shake (aka. my mint chocolate chip smoothie)

Simply blend 1 banana, 1/2 an avocado, 4 leaves of Romaine (or a handful of spinach), 1 cucumber (seeds out/skin off), 3/4 cup almond milk, a couple fresh mint leaves (if mint’s your thang – if not skip it!), a tbsp of cashew butter (any nut butter will do though!) and blend it all together! If you’re a mint chocolate chip fan – mix in some small vegan chocolate chips after it’s all blended. Enjoy your dessert for breakfast treat and skip all the green dye colored food during the day!

Chocolate Covered Strawberry Smoothie

choccoveredstrawberrysmoothie

We all have those mornings that are hard to wake up to. The morning after something in our life goes terribly wrong. Maybe it’s just a bad review at work, maybe it’s a break up, maybe it’s something as earth shattering as someone you love passing. Regardless of the degree, at the moment we usually don’t want to eat anything or we want to eat everything just to comfort ourselves. Both paths will leave us empty and feeling horrible. So this morning, when I was having one of those dreadful mornings you never want to wake up for, I decided to treat myself to something delicious and nourishing for my body, my brain and my heart. Chocolate covered strawberries are one of my favorite things in the world and so I decided to make myself a chocolate covered strawberry smoothie! Even though I have no appetite and it would have been super easy to skip breakfast all together, I know that right now my body needs me to take care of it. This smoothie was SUPER yummy and helped brighten my other wise gloomy day – I hope it can do the same for you- or just make your already awesome day even better! xo

Chocolate Covered Strawberry Smoothie
1 cup of chopped organic strawberries
1/4 cup vegan choc chips
1 tsp of almond butter
6oz container of plain coconut yogurt
1/2 cup of chocolate nut milk
2 pitted dates
5 ice cubes

Blend it all together and enjoy! :)

Louise’s Green Machine Smoothie

For those of you who watched The Taste last night, my #teamludo not only won the group VEGGIE CHALLENGE, but my girl Louise (aka. Weezy) won 2 gold stars for her veggie dish! Woot! Woot! Combine that with my man Lee saying that his gold star was for me and it’s safe to say I felt very happy with my friends stepping up there game and making some killer vegetarian dishes!
Naturally, I wanted to represent my veggie rockstar team mate Louise and asked her for a yummy recipe to share with you and I think you guys are going to LOVE this one!! Louise was kind enough to share this fabulous video with us of her making her “Green Machine Breakfast Shake” Check it out for a delicious and nutritious  way to get your greens in the AM and start your day off right. For those of you who are vegan watching, Louise does add some greek yogurt for protein, feel free to substitute that with a little more almond milk and scoop of almond butter OR if you like the yogurt-like consistency, they make some delicious almond and coconut ‘yogurts’ out there. Enjoy! Go #teamludo!

Good Morning Beautiful Smoothie

20130820-110549.jpg
You all know I’ve been on a smoothie bender this summer so I thought it only fair to share one of my go-to creations! This Good Morning Beautiful Smoothie was inspired by a concoction my friend got at our gym’s juice bar. Both of us enjoyed it so much that we ended up riffing up on our own late one night! Needless to say its become one of our morning staples! Hope you enjoy it as much as we do!

Good Morning Beautiful Smoothie
1/2 c almond milk
6 or so ice cubes
3 tbsps of gluten free oats
1 banana
1/2 c blueberries
1 tbsp almond butter
3 tsps of chia seeds

Blend till thoroughly mixed! ;)

Sweet Summer Green Smoothie

I don’t know about you but I’ve been on a HUGE smoothie kick all summer long. Seriously, when we got that crazy heat wave in NY I pretty much lived on smoothies because I couldn’t bare thinking of consuming anything that wasn’t cold and liquid. Smoothies are great for breakfast, I love making one after a workout or yoga sesh in the morning and taking it on the go with me as I start my day! I also confess that I do love smoothie pics on instagram. It’s so fun (for me atleast) to see what other people are concocting up. I mean, I’m sure we all enjoy a little of trial and error with our handy blender but sometimes it’s just nice to make something you KNOW is going to taste good! So when I saw my girl, Sarah, posting crazy yummy looking smoothie pictures and found out that they were made with some of my favorite super foods, well I just had to see if I could share them with all of you! Lucky for you, Sarah is a sweetheart and sent me over recipes and pictures right away! So get excited, this smoothie is total green gloriousness and amazingly good for you! Rev up those blenders…

Blueberry Oatmeal Protein Pancakes

bboatmealpancakes                  Weekends mean one thing to me, BRUNCH! So regardless of where I am or who’s kitchen I have access to, this lady always has some kick ass weekend brunch. This morning was no exception, although I was stuck at my parents with them gone for the weekend and me in total control of the fridge. So after scoping out my options I got a little crafty and whipped up these SUPER EASY to make, crazy delicious and incredibly filling Blueberry Oatmeal Pancakes! I think they’re a super fun, hearty brunch treat with all the fiber, flaxseed and protein you are sure to be full till dinner time but they are a healthy alternative to regular breakfast any day of the week.

Blueberry Oatmeal Protein Pancakes

2 packs of Trader Joe’s instant  whole grain blueberry oatmeal with flaxseed + plant sterols

3 cage free organic eggs

4oz of fat free vanilla or plain yogurt (I used Activa because that’s what my mom had in the house but you can use whatever you prefer, greek yogurt might be even better!)

Mix it all together and spoon it on to a non stick frying pan! This recipe should make three pretty large pancakes or six small pancakes! If you’d like to make a smaller version, I’d use one packet of oatmeal, one egg and 2 tbsps of yogurt! Yum!! Enjoy!

Dear Coffee, I MISS YOU!

latte                                  It’s five in the morning and I’m in Chicago, lacing up my running sneakers and putting on my fitbit for BlogHer’s 5K. It’s been almost 4 whole weeks since I broke up with my favorite addiction, the latte, and I need to confess, it has not been easy. I attended a pretty amazing panel yesterday for health bloggers and some of the speakers brought up a really interesting point, sometimes were TOO POSITIVE! Whaaaaaat?!! I pride myself on being motivating, positive and a constant source of good vibes for you guys, but they had a point.

LET’S GET REAL.

I’m human. I have bad days, too. GASP. To be honest, because of my meditation practice and dedication to treating my body well, they are a lot less frequent than they used to be. I do still want to be that source of positivity and encouragement for all of you but I think I’m going to start incorporating some of my struggles in here too. I want you to know your not alone. Rome wasn’t built in a day and neither is the most AMAZING, kick ass mind set or wonderful SUPER healthy eating habits! We are all a work in progress, myself included and the most important thing we can do is show up for our assignments and give it all we got!

On to coffee, I miss coffee. If you haven’t gathered from my instagram, twitter and facebook feeds, I am a crazy busy person. I am always on the go and sometimes I  don’t get nearly as much sleep as I really need. This wasn’t news to me but I guess it hit me like a ton of bricks once I gave up my “life juice”. I used to joke around that I was running solely on green juice and coffee, my miracle combination. Well my Sonny has lost it’s Cher and it’s a little rainy over here in paradise. I have stayed true to my guns, I’ve been replacing my java with some english breakfast tea when times are hard and getting through it. However, I did want to come clean to you and let you know it hasn’t been a walk in the clouds.

Of course, the fact that I’ve barely gotten 6 hours of sleep any given night this week, is not helping. So learn from me and please, if your ready to take the plunge, be prepared! Treat yourself really well! Make sure you can get enough sleep and maybe even plan on sleeping a little more than normal to be safe. Resisting coffee is not half as bad when you are fully rested, I promise. I’ve also been weening myself down slowly and drinking a lot of black teas with nut milk. For me, a nice english breakfast or oolong tea with coconut almond milk really fills the void that coffees left. In general, any tea is good, especially green and white teas, which are extremely healthy for you!  A lot of the time we are missing our “clutch”, we miss having that in between meals hold-me-over cup or just the oral fixation of constantly drinking something during the day or to get through a really long meeting. A little unsweetened cocoa powder and nut milk heated up can do that trick as well.

Well stay strong my loves! If you have begun your coffee-less journey, please tweet, comment, facebook and instagram me so I can keep up with you! I’d love to hear what kinda things your drinking in place of coffee and what struggles you having! Just #gosweetandskinny on instagram or twitter so I can see them!

Vegan CRACK Bars

vegan protein bar2

And by CRACK, I mean protein but these little suckers are so tasty that they should be considered crack! I literally had to hide them so that I would stop eating them. So bake these in a cookie sheet and then as soon as they cool immediately cut them and put them out of reach or give some to the neighbors, they’re that dangerous.

Okay, now that I’ve got your scared and excited, here’s the recipe!

VEGAN CRACK BARS
Preheat your oven to 350 degrees and get your non stick cookie sheet ready on the stove. In a large bowl combine the following ingredients and then mix gently till they are all solidly stuck together and evenly distributed.

2 cups of oats
1 cup of goji berries
2 tbsp of cashews
3/4 cup all natural peanut butter
3 tbsp of hemp seed
1 tbsp of chia oil
4 tbsp of vanilla hemp protein powder
3 tbsp of maple syrup
1/4 cup almond milk
1/2 cup mini vegan choc chips (I Love ENJOYLIFE! brand)

Next spread the whole mixture the size of the pan so it covers all corners. It should be relatively thin, maybe a 1/2 inch – an inch thick. Bake for 5-10 minutes or until the edges get toasty brown. Let cool, and you’ve been warned what to do once they’re all cooled. ;)

Vegan Mac + Cheese

vegan mac

In reality this dish is quinoa + cheese, but it really scratches the itch for it’s naughty alter ego mac and cheese! This stuff came out creamy and amazing, it’s SUPER easy to make and a definite MUST TRY!

VEGAN “MAC” and CHEESE
1 cup of water
1/2 cup quinoa
4 slices of Daiya cheese
1 tbsp of vegetable oil spread

Boil your quinoa in the water, and stir it around until most of the water has evaporated. Now add in your vegetable oil spread, tear up the slices of daiya cheese into your saucepan and mix everything together. I even added some chopped avocado after this picture was taken to kick it up a notch but it’s pretty delicious either way!

Raspberry Key Lime Protein Smoothie

raspberrykeylimesmoothie

It’s a scorching 90 degrees in New York City today and I was itching for something light and cold for lunch after running around to meetings all morning so I whipped up this delicious and refreshing protein and fiber packed concoction! Give it a whirl this summer!

Raspberry Key Lime Protein Smoothie
1 cup coconut milk
6 ice cubes
1 lime, chopped and skinned
1/2 cup frozen or fresh raspberries
4 scoops of Adonia Key Lime Pie fat free frozen yogurt
4 tbsps of vanilla hemp protein powder (Manitoba Harvest)

Blend it all together and top it off with a lime for a little added festiveness! This delicious smoothie has 10 grams of protein and 10 grams of fiber!

Chocolate Raspberry Vegan Protein Shake

After my morning workout today I was really craving something cold and fruity! So I decided why not use some of the great products I sampled last night at NYC’s food fete and whip up something yummy! Combining So Delicious’s chocolate coconut milk and Manitoba Harvest’s hemp protein powder for a protein packed, craving satisfying, sweet breakfast treat! And the best part is that it takes only minutes to make!

Chocolate Raspberry Protein Shake

4 tbsp of Manitoba Harvest hemp powder
1 cup So Delicious chocolate coconut milk
1 cup frozen raspberries
Half a tray of ice cubes

Blend and enjoy! You can add bananas, strawberries or whatever you’d like as long as your base is the hemp protein and coconut milk, you’ll still get a wonderful animal product free dose of protein!

Skinny Spot: Sacred Chow

20130304-230918.jpg
There’s not much I love more than a nice New York brunch, except maybe a nice NY vegan brunch! I can not believe I’ve lived in New York for almost four years and hadn’t stumbled upon this adorable vegan spot earlier! Located right by Washington Square Park “Sacred Chow” is your typical adorable hole in the wall little vegan joint. I had a lovely little brunch date with my girlfriend there and we both loved our food and giant mimosas, hehe. She got the Sardinian omelet and I indulged in their belgian waffles with coconut whipped cream and fresh fruit! Yummy! We both agreed we’ll definitely have to go back and try out their dinner menu. I’d highly recommend brunch here if your just going vegan and want to treat yourself. It’s a cute place with delicious food in one of my favorite nyc neighborhoods!

Visit their website to view their whole menu!
