Mocha Protein Smoothie

I’m not a big protein shake girl, it’s never really been my thing. So when I got a sample of body logix’s chocolate vegan protein powder, I just stuck it in my drawer. Fast forward to these past few weeks where I’ve been training for a half marathon and it has been really interesting finding just the right kind of breakfast to get me going before my run. It can’t be too heavy or I won’t feel well and it can’t be too light or I won’t run as long as I need to, so a protein smoothie seemed like it just might be right! I jazzed this one up by adding flaxseed meal and even snuck in some kale, of course.

Mocha Protein Smoothie
1 serving size of chocolate vegan protein powder ( I used bodylogix and it tasted good. It’s also soy free, dairy free, non gmo and has no artificial flavors. They DID NOT pay me to say this! haha)
1 frozen banana (but a regular one will do)
1/2 cup almond milk
1/2 cup coffee
2 tbsp flaxseed meal
1 cup of kale ( or just two handfuls of kale)
4 ice cubes

Blend it all together and enjoy! You can also add dates to make it a little sweeter but I’m off the sugar right now so that’s why I didn’t.

Homemade Almond Butter

                Currently, I’m training for the More/Fitness Magazine half-marathon in NYC as well as recipe testing for my upcoming Sweet + Skinny Summer Detox. I have been on a mission to find some delicious, protein packed foods that are light Senough to keep you slim but substantial enough to power you through a long sweat session. It’s safe to say almond butter has become my new best friend!
I scoop it into my smoothies, add it to my oatmeal and love having it on some sliced green apples before my morning run. It’s packed with protein and good for you fats that my body needs to keep up with all my training. Almond butter satiates me and gives me a great, clean energy for the day. You can count on it being all over the recipes for my new detox and upcoming blog posts.
To make things even more exciting, I decided to go out on a limb and make it at home with my new Samson Juice Extractor. I had seen in the manual that it was possible but hadn’t really thought to give it a go till recently when my almond butter habit had been getting a little expensive. To my surprise, making almond butter was incredibly easy with my Samson and it came out so delicious that I had to share the recipe with you!

Sweet + Skinny Raw Almond Butter
If you’re using a Samson Juice Extractor like mine, simply switch to the mincing head from the juicing one. Turn it on and toss your almonds in the head at the top. (I’m sure this would be possible in a food processor if you don’t have a juicer as fancy as mine – definitely don’t try it on a regular juicer, you will break it!)

¾ cup of raw almonds
2 tsps of coconut oil
1 tsp of pure vanilla extract
1 tsp of pumpkin spice

Put your almonds through and you should have a slightly dry ground almond paste. Mix in the rest of your ingredients and feel free to knead it with your hands like sugar cookie dough. It will be slightly drier than the stuff you buy in a jar, if you prefer it a little creamier feel free to add additional coconut oil to your liking. Macadamia nut oil also works well if you are not a fan of the coconut.

Chocolate Covered Strawberry Smoothie

We all have those mornings that are hard to wake up to. The morning after something in our life goes terribly wrong. Maybe it’s just a bad review at work, maybe it’s a break up, maybe it’s something as earth shattering as someone you love passing. Regardless of the degree, at the moment we usually don’t want to eat anything or we want to eat everything just to comfort ourselves. Both paths will leave us empty and feeling horrible. So this morning, when I was having one of those dreadful mornings you never want to wake up for, I decided to treat myself to something delicious and nourishing for my body, my brain and my heart. Chocolate covered strawberries are one of my favorite things in the world and so I decided to make myself a chocolate covered strawberry smoothie! Even though I have no appetite and it would have been super easy to skip breakfast all together, I know that right now my body needs me to take care of it. This smoothie was SUPER yummy and helped brighten my other wise gloomy day – I hope it can do the same for you- or just make your already awesome day even better! xo

Chocolate Covered Strawberry Smoothie
1 cup of chopped organic strawberries
1/4 cup vegan choc chips
1 tsp of almond butter
6oz container of plain coconut yogurt
1/2 cup of chocolate nut milk
2 pitted dates
5 ice cubes

Blend it all together and enjoy! :)

Vegan Pumpkin Balls

These little oat filled treats are great to have around the house if you’re a snacker in need of a healthier option. They are also jam packed with fiber so just one (or two) will keep you feeling satisfied till your next meal. I have to be honest, they are definitely more along the lines of a granola bar kinda deal than they a cookie. You’ve been warned! That said, they are still very delicious. I love having them as a breakfast on the go, I can just throw 2 or 3 in a little zip lock and eat them on my way in the morning.

Vegan Pumpkin Balls
3 cups gluten free oats
1 cup pumpkin puree
1 tsp vanilla
1/2 tsp cinnamon
1 tsp pumpkin pie spice (I use this liberally)
1 tbsp flax seed meal
1 cup of crushed cashews
1/2 cup vegan (or regular if you wish) dark chocolate chips

Mix it all together and then make baby balls and place them on a parchment paper lined baking sheet. Put them in the oven at 350 for about 5 minutes. You just want them to set a little bit, you don’t need them to “bake”. Let them cool and enjoy! Super easy snack and you can sub out the chocolate chips for raisins or craisins or add in dried cherries and really have some fun with it!

My Green Standard

It’s hard to imagine my life before green juice, in all seriousness, my body runs on this stuff! So naturally, my first book was called JUICESPIRATION : Recipes, inspiration and everything you need to have an amazing juice cleansing journey!an ode to my absolute devotion to the miraculous drink because I’m a total addict. Green juice is an amazing way to give yourself a healthy, nutrient boost anytime, especially once that 4pm slump comes around and it’s a little too late in the day for coffee! Personally, I also think it’s a great way to start your day. I always feel better and want to make healthier choices through out my day when it begins with a big glass of a green juice. Why I’m JUICING!

I’m on DAY FOUR! Going strong and feeling amazing, my cleanse officially ends on midnight tomorrow night as I ring in 2014 and I could not be happier! But WHY am I cleansing!? Even my dad asked me,”You are already so CLEAN from all the food you eat, I don’t get it, why do you need to cleanse?!” haha Leave it to dad! Well for me, it’s not really about losing weight or even necessarily “cleansing”. Juicing gives me AMAZING energy, pure, all natural drive and a clear head. It helps me zero in on what I need to accomplish and also connect to a deeper place inside me so that when I meditate and write, it’s really coming from a deep loving place that’s true to my core. Of course, after thanksgiving and christmas, it’s always a beautiful reminder of just how GOOD are bodies can feel when we are putting the good stuff in and not weighing it down. I thought what better way to say hello to 2014 than with a clear head, an open heart and an energized body! Defining Myself

I need to open up with you about something I have struggled with for a LONG, long time. This week it was really brought to the forefront of my mind because of a really exciting opportunity! Unfortunately, I can not officially  let you know what I’m doing but let’s just say it involves my handy-work in the kitchen and a lot of people watching me. (wink, wink) I promise to let you know as soon as I LEGALLY can! But for the purpose of today’s blog, let’s just say I was asked by someone relatively important if I was a vegan chef. In that moment, I was forced to do something that I was very uncomfortable with..

DEFINE MYSELF.

At first, I said,” well,  yes, I am mostly known for my vegan cupcakes.”But after a few seconds I corrected myself. ” I don’t only cook vegan, I just try to make really delicious things healthier for people with out losing the whole ‘delicious’ part of the equation.” It felt weird and I’m sure they weren’t pleased with my Switzerland- like answer.  Honestly, I get this question A LOT  so I felt like it had to be addressed and leave it to the universe to create such a formal occasion for it! Truth is some ( NOT ALL) vegans don’t really like us ‘swiss’ types either, people have their beliefs (carnivore, vegan, low carber) and they feel very passionate about them. Don’t get me wrong, I’m passionate, but I’m passionate aboutPEOPLE GETTING HEALTHY AND ENJOYING IT! Yes, I personally, a hundred percent agree with veganism but even I occasionally have an egg or want a piece of salmon. I don’t beat myself up, I’m human, I do my best and I listen to my body.
More importantly though, I don’t want to single anyone out. I want to help you whether you’re used to eating 4 cheese burgers a week or you are ready to go raw vegan! So my cooking, when it’s for me, is mostly vegan/vegetarian but you bet I can cook almost anything and I want to be able to cook anything! I aim to provide a variety of healthy recipes and tips on the site and as well as when I’m one on one with my coaching clients.
Starting to clean up what you put on your plate and take charge of your mind and body is no small task but where there’s a will there is a way. So whether you’re still eating steak or you are on a juice fast, it’s cool. Start at your own pace, don’t get intimidated, maybe try a juice for breakfast or make one of my vegan treats that look yummy and incorporate it in your day to day. Slowly but surely you will start learning this whole other beautiful palette that your body wants and craves. But for now, if you want a healthy, good for you recipe with chicken or meat, feel free to reach out and email me. There is no “perfect” diet, there is only what works best for you body right now. We’ve all grown up with  a very similar processed, American diet and we’re all at different stairs on the staircase to our happiest, most vibrant, fit and thriving bodies. I want to be there every step of the way because everyone deserves a chance ( and the help) to get that fabulous place where we feel amazing, look fabulous and love our lives. 

So if I’m going to define my cooking style, I’m a maker of delicious, healthy dishes that help people lead their happiest lives and promote their over all well being. 

I simply refuse to be put in a box.

Greek Eggplant Tapenade

I love me some eggplant!! This Greek eggplant tapenade is totally vegan, low fat, healthy and wonderfully delicious. I really enjoy making a big batch of this at the beginning of the week and having it for breakfast or a light lunch through out the week on some toasted  ezeikel bread but it’s also great served with crostini at a cocktail party. It’s light yet decadent and totally good for you!

Skinny Greek Eggplant Tapenade

2 small eggplants

1/2  of a (medium sized) red onion, diced

2 garlic cloves, minced

3 branches of fresh parsley, minced

1 branch of fresh oregano, minced

the juice of one lemon

1/3 cup of extra virgin olive oil

3 tbsp of balsamic vinegar

(ezeikel bread or a baguette to slice and toast)

You can use prepackaged garlic, oregano or parsley if you MUST but when possible, FRESH IS ALWAYS BEST! It will just taste, so much better! Preheat your oven to 400 degrees and wash your eggplants and then stab them with a fork all over to give them a bunch of tiny holes all over so they don’t explode in your oven. Place those babies in a casserole pan and stick them in the oven for about 20-30 minutes to roast. The skin should get slightly scorched and that’s totally okay. 

While those little darlings are cooking, get to your cutting board to prepare all your flavoring agents! Dice your red onion, mince the garlic, parsley and oregano and put it in a bowl off to the side. Once your eggplants are done, cut the top with a stem off , slice and chop it into rather small chunks, removing any big seed pockets. Place your chopped eggplant in a large frying pan on medium-low heat on the burner and add your oil. Stir in your bowl of chopped and minced friends and then continue to add your balsamic vinegar. Slice your lemon in half and squeeze out that juice into the mixture! Be sure to keep stirring the eggplant tapenade while adding ingredients. Keep it on the heat till it’s reached your desired consistency (it will get slightly mushier the longer it’s on) and add salt and pepper to taste. I tend to keep it on the burner for another 5 minutes or so, tasting as I go. Enjoy on some toasted ezeikel bread or serve to your friends on a lovely slice of baguette. 

 

 

Quinoa Berry Breakfast

My amazing friend Katelyn whipped up this delicious breakfast for me this morning and I loved it so much I had to share! Quinoa can be a wonderful oat alternative for breakfast. Since it’s a perfect protein you get all the fiber from oatmeal but the added bonus of protein as well! As we head into the fall and colder months, I have a feeling this might become a morning go-to for me.

QUINOA BERRY BREAKFAST
1/4 cup quinoa
1/2 cup almond milk
1 banana
A handful of berries ( I use blueberries and raspberries for mine)
1 tbsp of coconut oil
1 tbsp of Chia seeds

Boil your almond milk in a saucepan with your quinoa constantly stirring. Add chopped up bananas and berries immediately as well as your chia seeds and coconut oil. This way everything is a nice hot gooey mush together! You can add more bananas and berries on top when it’s done or if you want to really spice it up sprinkle some chopped almonds or granola!

Well it’s so easy to get busy and forget how important physical fitness is to both our mind and our body! I know I’m totally guilty of it, I love my yoga but when I have a ton of things going on sometimes it slips to the bottom of the list. When we’re busy and stressed is actually when we need to get moving the most! Why 40 days? Well it takes about 40 days to really make something a habit, a ritual, something you just do. Good Morning Beautiful Smoothie

You all know I’ve been on a smoothie bender this summer so I thought it only fair to share one of my go-to creations! This Good Morning Beautiful Smoothie was inspired by a concoction my friend got at our gym’s juice bar. Both of us enjoyed it so much that we ended up riffing up on our own late one night! Needless to say its become one of our morning staples! Hope you enjoy it as much as we do!

Good Morning Beautiful Smoothie
1/2 c almond milk
6 or so ice cubes
3 tbsps of gluten free oats
1 banana
1/2 c blueberries
1 tbsp almond butter
3 tsps of chia seeds

Blend till thoroughly mixed! ;)

I’m SHARING my BROWNIES!

These past six months have been wondrous to say the least. It’s truly been incredible to watch the Go Sweet and Skinny crew go from a group of people who went to school with me at some point or knew me through some NY social circle to a much larger group of amazing people determined to lead happy, healthy, inspired lives from all over the country! YAY! I am so happy to have you all joining me on this journey and feel so grateful to help provide you with the tools to living an amazing, vibrant, healthy life. It’s an interesting observation that I had I tonight though, because the bigger it grows, the larger my desire to stay personal is. I feel like more than ever I am writing super specific and intimate posts about what I’m going through because whether you actually went to high school with me or you happened to stumble upon my book on amazon, I want you to KNOW me, really know me and feel like I’m just that health nut girlfriend that gives you really awesome tips and killer recipes when you’re in a bind! My close friends get such a kick out of my youtube videos on GoSweetandSkinnyTV because it’s just like actually talking to me, I’m that ridiculously myself in them for you and that makes me really happy to hear.

So anyways, I know you’re wondering what in the world I meant by “sharing my brownies”, am I doing a vegan brownie give-a-way?! Sadly, no, but maybe at some point in the future if there is a big enough uproar I will. I was listening to an incredibly inspirational seminar by Fabienne Fredrickson and she gave a really touching antidote that really tugged on some strings for me and I just felt like I had to share so that you guys could really feel where I’m coming from. Forgive me for butchering it, Fabienne, but here’s my spark notes version of it:

Imagine you’re hosting a dinner party and all the guests are in the living room while you are baking brownies in the kitchen. The aroma of the baking brownies is seeping through the house and guests happen to wander in and out of the kitchen asking what you’re up to. Now let’s fast forward to your brownies being done, all cut up, cooled and put on a plate. Guests are coming in to see what’s going on but you are just huddled in a corner with your plate of brownies and you are not letting anyone else eat them!

Seems pretty ridiculous, right? Why would you bake delicious brownies and then not share them with ANYONE!? Well Fabienne used this to compare to those of us with service oriented businesses being afraid of marketing our services. Safe to say, it really hit home. When Go Sweet and Skinny started to take off and I saw the need for individualized guidance, offering up one on one assistance to help my amazing followers on their own specific path to a happy, healthy, AMAZEBALLS life was a total no brainer!

AND THEN I STARTED HOARDING MY BROWNIES!!

I got so worried that people might think I was forcing them to buy something or trying to “sell” them on coaching that I was very hush-hush about it. I offered it when people came to me specifically looking for guidance and touched on it here and there without making any huge waves. Fabienne made realize that not only was I totally incorrect in my assumptions but that I was depriving you of the amazing services I have to offer by not even letting you know that I offer them! And that’s when it really hit me.  Not to mention, of course, I received some very loving emails saying that they saw a post about my FREE 30 minute breakthrough sessions and had never even known that I offered an one on one counseling package despite being avid followers of my facebook and blog. Whoa! Thanks for the re-enforcement universe!

Well, it worked, I am here and I am happy to say that I WILL NOW BE SHARING MY BROWNIES!  I will share my brownies with love and a smile from here on out! If I can help someone by offering my support one on one as they embark on their journey towards a life and body they love  - I want them to know about it! So be prepared to hear a bit more from me on this now. I’m talking LOUD + PROUD now. Of course, the recipes, tips and inspiration will always be the foundation of everything GSS but I’m really excited to be able to guide people individually on their specific path to health and happiness! It can be really hard and confusing at times to make massive change all by yourself and we all have different areas in our life we could use a little reinforcement in to help us push through to the next level. I’m here for those people who are ready and willing and need a partner to help them climb up the rest of the mountain to healthy body bliss because it’s so much easier when you have a guide who’s been there and done it and knows the path.

HOW CAN YOU SHARE YOUR BROWNIES TOO!?

Well it’s not just me that needs to share my brownies, you’ve got a plate too!! A great, easy way to start sharing your brownies is to start spreading the love, inspiration and tips you find on GSS as well as your other favorite healthy living blogs. Share healthy recipes or inspiration posts on facebook or twitter, instagram healthy food pics or motivational quotes. You don’t need to be an authority to pass along the brownies! If you’ve found some delicious stuff, take a little for yourself and then spread the love!! Not only will it make you feel amazing but you are helping other people have a chance to enjoy them as well. Sweet Summer Green Smoothie

          I don’t know about you but I’ve been on a HUGE smoothie kick all summer long. Seriously, when we got that crazy heat wave in NY I pretty much lived on smoothies because I couldn’t bare thinking of consuming anything that wasn’t cold and liquid. Smoothies are great for breakfast, I love making one after a workout or yoga sesh in the morning and taking it on the go with me as I start my day! I also confess that I do love smoothie pics on instagram. It’s so fun (for me atleast) to see what other people are concocting up. I mean, I’m sure we all enjoy a little of trial and error with our handy blender but sometimes it’s just nice to make something you KNOW is going to taste good! So when I saw my girl, Sarah, posting crazy yummy looking smoothie pictures and found out that they were made with some of my favorite super foods, well I just had to see if I could share them with all of you! Lucky for you, Sarah is a sweetheart and sent me over recipes and pictures right away! So get excited, this smoothie is total green gloriousness and amazingly good for you! Rev up those blenders…

Sweet Summer Green Smoothie
- 1 layer of kale leaves
- 1 layer of spinach
- 1 in. chunk of ginger peeled and cut up
- 1 cup sliced strawberries
- half of a peach (cut up)
- 1 tsp. flaxseed
- 1 TBS Sunfood Maca Powder
- 1 scoop GNC Lean Shake Key Lime flavor
- 1.5 C almond milk (unsweetened)
And blended along with ice, of course.

Blueberry Oatmeal Protein Pancakes

 

bboatmealpancakes                  Weekends mean one thing to me, BRUNCH! So regardless of where I am or who’s kitchen I have access to, this lady always has some kick ass weekend brunch. This morning was no exception, although I was stuck at my parents with them gone for the weekend and me in total control of the fridge. So after scoping out my options I got a little crafty and whipped up these SUPER EASY to make, crazy delicious and incredibly filling Blueberry Oatmeal Pancakes! I think they’re a super fun, hearty brunch treat with all the fiber, flaxseed and protein you are sure to be full till dinner time but they are a healthy alternative to regular breakfast any day of the week.

Blueberry Oatmeal Protein Pancakes

2 packs of Trader Joe’s instant  whole grain blueberry oatmeal with flaxseed + plant sterols

3 cage free organic eggs

4oz of fat free vanilla or plain yogurt (I used Activa because that’s what my mom had in the house but you can use whatever you prefer, greek yogurt might be even better!)

Mix it all together and spoon it on to a non stick frying pan! This recipe should make three pretty large pancakes or six small pancakes! If you’d like to make a smaller version, I’d use one packet of oatmeal, one egg and 2 tbsps of yogurt! Yum!! Enjoy!

Dear Coffee, I MISS YOU!

latte                                  It’s five in the morning and I’m in Chicago, lacing up my running sneakers and putting on my fitbit for BlogHer’s 5K. It’s been almost 4 whole weeks since I broke up with my favorite addiction, the latte, and I need to confess, it has not been easy. I attended a pretty amazing panel yesterday for health bloggers and some of the speakers brought up a really interesting point, sometimes were TOO POSITIVE! Whaaaaaat?!! I pride myself on being motivating, positive and a constant source of good vibes for you guys, but they had a point.

LET’S GET REAL.

I’m human. I have bad days, too. GASP. To be honest, because of my meditation practice and dedication to treating my body well, they are a lot less frequent than they used to be. I do still want to be that source of positivity and encouragement for all of you but I think I’m going to start incorporating some of my struggles in here too. I want you to know your not alone. Rome wasn’t built in a day and neither is the most AMAZING, kick ass mind set or wonderful SUPER healthy eating habits! We are all a work in progress, myself included and the most important thing we can do is show up for our assignments and give it all we got!

On to coffee, I miss coffee. If you haven’t gathered from my instagram, twitter and facebook feeds, I am a crazy busy person. I am always on the go and sometimes I  don’t get nearly as much sleep as I really need. This wasn’t news to me but I guess it hit me like a ton of bricks once I gave up my “life juice”. I used to joke around that I was running solely on green juice and coffee, my miracle combination. Well my Sonny has lost it’s Cher and it’s a little rainy over here in paradise. I have stayed true to my guns, I’ve been replacing my java with some english breakfast tea when times are hard and getting through it. However, I did want to come clean to you and let you know it hasn’t been a walk in the clouds.

Of course, the fact that I’ve barely gotten 6 hours of sleep any given night this week, is not helping. So learn from me and please, if your ready to take the plunge, be prepared! Treat yourself really well! Make sure you can get enough sleep and maybe even plan on sleeping a little more than normal to be safe. Resisting coffee is not half as bad when you are fully rested, I promise. I’ve also been weening myself down slowly and drinking a lot of black teas with nut milk. For me, a nice english breakfast or oolong tea with coconut almond milk really fills the void that coffees left. In general, any tea is good, especially green and white teas, which are extremely healthy for you!  A lot of the time we are missing our “clutch”, we miss having that in between meals hold-me-over cup or just the oral fixation of constantly drinking something during the day or to get through a really long meeting. A little unsweetened cocoa powder and nut milk heated up can do that trick as well.
