Healthy Football Snacks: Zucchini Fries with Buffalo-Ranch Dressing

With the Super Bowl coming up this weekend, I thought it would be fun to bring in my boyfriend, chef Lee Knoeppel to help me whip up a yummy snack for the game that would be both healthy and ‘man-friendly’. These Zucchini Fries are so addictive you’d never guess they were healthy and his ‘buffalo-ranch’ dressing is going to blow the mind of you ranch dressing fanatics.

Vegan CRACK Bars

vegan protein bar2

And by CRACK, I mean protein but these little suckers are so tasty that they should be considered crack! I literally had to hide them so that I would stop eating them. So bake these in a cookie sheet and then as soon as they cool immediately cut them and put them out of reach or give some to the neighbors, they’re that dangerous.

Okay, now that I’ve got your scared and excited, here’s the recipe!

VEGAN CRACK BARS
Preheat your oven to 350 degrees and get your non stick cookie sheet ready on the stove. In a large bowl combine the following ingredients and then mix gently till they are all solidly stuck together and evenly distributed.

2 cups of oats
1 cup of goji berries
2 tbsp of cashews
3/4 cup all natural peanut butter
3 tbsp of hemp seed
1 tbsp of chia oil
4 tbsp of vanilla hemp protein powder
3 tbsp of maple syrup
1/4 cup almond milk
1/2 cup mini vegan choc chips (I Love ENJOYLIFE! brand)

Next spread the whole mixture the size of the pan so it covers all corners. It should be relatively thin, maybe a 1/2 inch – an inch thick. Bake for 5-10 minutes or until the edges get toasty brown. Let cool, and you’ve been warned what to do once they’re all cooled. ;)

Summer Avocado Salad

summeravocadosalad

Nothing says summer quite like colorful, light salads and this Summer Avocado Salad certainly fits the bill! I have been having some fun lately trying out various recipes for upcoming projects and I fell in love with this one! It’s perfect on it’s own as a light starter for your summer backyard dinner party or you can serve it with whole pita chips as an appetizer. Enjoy!

Summer Avocado Salad

2 Avocados (or one avocado per person)

3/4 of a mango chopped

1/4 of red pepper, seeded and finely chopped

1/4 green pepper, seeded and finely chopped

1/2 cup of grape tomatoes, sliced

1/4 of a cucumber, skinned and chopped

1/4 of a red onion, chopped

“Dressing”

juice of 1/2 a lemon, 1/2 a lime, 1 tbsp of Olive Oil and a pinch of salt

Combine all ingredients in one bowl, cutting and slicing your avocados last (so that they don’t brown prematurely), mix up your “dressing” in a separate bowl and then toss it in with all the veggies and fruits. Serve either as a dip with whole wheat pita chips or in a fun glass (like I did) as a creative, light starter for your festive summer dinner party! Tastes so fresh and so summery, you’re going to love it!

My Favorite Guacamole

guacamole

I was actually taping a video about how to make my favorite guacamole when half way through the filming the camera shut off and I didn’t realize it till I had already made a ton of guacamole. So of course, I stuffed my face with fresh guacamole (after taking that picture for you guys, of course!) and decided it would have to be a post for now! The thing I love about guacamole is that everyone has their own way of making it, every restaurant and every person I have asked always has their own favorite spin on it. Mine is pretty simple, fruity, mild and tomato-less. You could find that totally boring or amazingly delicious but the fabulous thing about guacamole is that you start with an avocado and then it’s really up to you from there. So I’ve included my recipe below but I would love for you to comment, email and tweet me YOUR special guac recipes! Maybe we can make a Guac -Ten ways post and I can share some of your tips & tricks (and of course give you proper kudos!).

CASSANDRA’S FAVORITE GUAC

1 avocado : cut in half, pit removed, then cut horizontally and vertically a couple times before taking your knife around the edge by the skin and allowing the avocado to fall out of the shell
3 whooping tbsp of chopped onions
half of a mango diced
juice of half a lime
1/4 tsp of salt

Chips made from whole wheat pita’s cut into triangles and baked in the oven for 5 -10 minutes! Such an easy and delicious snack! Oh and did I mention it’s naturally VEGAN!? Win! :)

A WEEK OF DETOXING

I’ve spent the last five days on a detox plan and I am not proud to say that it was a lot more challenging than I had thought. I typically tend to do juice detox so this was my first official ‘eating clean’ detox. Essentially all I could have was 4 cups of green tea, herbal tea, fruits & veggies, quinoa, black beans, lentils and almonds. Oh and I could have some oats in the morning! Not bad, right? It doesn’t seem hard because you still get to eat and your not just surviving on juices but it still has eliminated all processed foods and sugars (other than natural fruit sugars).

Would I advise you to try this detox diet plan ?
Sure, the detox is nutrient loaded and can help you get creative with fruits and veggies. You’ll end up discovering you have a taste for way more healthy meals than you ever thought. You’ll also ween yourself off sugar and coffee, which is HUGE progress! I’m finished with the detox but I’m still maintaining awareness of not consuming a lot of sugar or processed foods.

Did you lose a lot of weight?
Well, I lost a few pounds but keep in mind I generally eat pretty healthy and didn’t have much to lose. If you continued to consume the detox foods past the 5 days and adapted it as more of a vegan or clean eating lifestyle you would certainly see weight loss and if you normally eat pretty crappy, you are absolutely guaranteed to drop some pounds.

Were you hungry or tired all the time on the detox?
I was a little tired at first because I was extremely coffee dependent but after the first day or so that subsided and I was fine. I did notice myself sleeping “harder” at night, if you know what I mean. I would literally pass out and not budge till my alarm rang in the morning. Hungry I wasn’t but I was craving things ALL THE TIME! The oats and quinoa fill you up but your left feeling kind of empty, itching for something more. I had cravings for anything from salmon to red velvet brownies, which got torturous.

On the whole, the detox diet felt great to do something nice for my body. Detoxing definitely reminded me how important it is to be aware of what we’re putting in our bodies and how good we can feel when we put high quality vitamins and nutrients into us. It’s definitely not easy to eat super healthy and not eat processed foods all the time but with a little extra time and preparing meals and planning out what your going to eat each day you can make your life more conducive to it. Clean eating is ALWAYS the way to go and I would highly recommend doing this detox diet to anyone who wants to refresh their system, gain energy and kick start some healthy eating habits!

Sinless Snickerdoodles

20121228-115954.jpg

These vegan snickerdoodles were a huge hit over the holidays with all my non vegan friends and family so I knew I had to share it with you! These light and crunchy, cinnamon sugar cookies are amazing all year round! Enjoy!

VEGAN SNICKERDOODLES

1 cup non hydrogenated margarine (softened)
1 1/4 cups sugar
2 tablespoons non dairy milk
1 1/2 teaspoons pure vanilla extract
1 2/3 cup all purpose flour
1/4 cup cornstarch
1 teaspoon cream of tartar
1/2 teaspoon baking soda
1/4 teaspoon salt

In a large bowl, cream the margarine and sugar together for a couple minutes till its mixed well. Add your non dairy milk and vanilla and beat till that’s combined as well. Now sift in flour, cornstarch, cream of tartar, baking soda and salt and mix until a soft dough forms. Chill dough for atleast 30 minutes ( so its easier for you to work with). Preheat your oven to 350 degrees and get out your cookie sheets. In a small shallow bowl or tray combine sugar, cinnamon and a pinch of nutmeg. Drop a tablespoon of dough in your cinnamon sugar mix and roll it into a ball. Place the balls on your cookie sheet and lightly sprinkle some cinnamon sugar both before and after it goes in the oven. Cookies should take 10-12 minutes to cook, they’ll get puffy in the oven but will deflate once you let them cool.

Sweet Little Potato

You know those mornings when you wake up just ravenous for some sweet carby treat?! It usually happens to me on the weekends or during that lovely time of the month. Well this is perhaps an unusual but totally satisfying breakfast idea for you to give a spin!

Sweet Potato with Almond Butter and Maple Syrup

Poke a medium sweet potato with a fork 3 times; microwave on high until cooked, 3 to 5 minutes. Cut the potato in half lengthwise and mash up the insides a bit. In a seperate bowl, mix 2 tbsp of almond butter and tsp maple syrup and drizzle it over the potato! There you have it, quick and easy and loaded with good for you foods!

B.Y.O.S.

20120901-152444.jpg

I was on location this weekend for a film shoot and it just reminded me of the importance of B.Y.O.S. or bring your own snacks! Now I’m lucky enough to be able to make specific requests most of the time like vegetarian, lots of fresh fruits and veggies, etc., however, I still always try to remember to bring a “just incase” snack. You never know when they’ll have donuts and bagels for breakfast and your ravenous after a long night of sleep and will be tempted eat anything. Bringing snacks helps you stay on track without starving!

For this particular shoot the other actress and I brought fiber one bars, special K meal bars and mixed nuts. Not exactly a buffet but enough to tie us over if need be. Now normally I would recommend staying away from over processed bars but in this instance it’s much easier to have a few bars and a bag of nuts in your purse instead of dealing with perishables. So maybe you don’t have a film shoot coming up but it also comes in handy for road trips, camping trips or your office retreat, pretty much anywhere your at someone else’s mercy for food!

Nuts are a great go-to, just watch out for the salted or cinnamon sugared ones. Get plain nuts and don’t eat much more than a handful at a time. Nuts have lots of great fat in them and we really don’t need as many of them as we think to feel full. Just give your body a little time to digest and then go back for seconds if you still want. This particular nut mix is pistachios, almonds and cashews. Pistachios are a really top choice nut health wise and cashews have ‘happy’ nutrients in them that can be a sort of natural Prozac. They’re two of my favorites!

Fiber/protein bars can be a little trickier. Some are loaded with sugars and carbs so you’ll have to do a bit of label reading for these. I love the Special K meal bars because they have a lot of fiber and protein, plus they taste pretty good. They can fill you up and leave you satisfied for around 170 cals. Some of my other favorites include LARABARs which are vegan and made from fruits and nuts. My two go to flavors are lemon pie and cherry pie- they’re soo yummy! KIND bars are also great but I think of them as more of a snack or maybe a quick breakfast/lunch when there’s not too much time till the next meal. They have a great blueberry cashew and a naughty dark chocolate sea salt that can hit the spot. Don’t be afraid to spend a little time in the store aisle reading all the nutrition labels, it’ll help you find a great bar that’s good for you and can become your diet’s safety net!

The Cinnamon Snail

20120716-224903.jpg

I had the luck of running into the “Cinnamon Snail” truck downtown while running to an audition the other day. So naturally I promised myself a treat after I delivered a stellar performance! I had heard of The Cinnamon Snail through the vegan grapevine and started following them on twitter (@veganlunchtruck) to be up to date on their locales, however this rendezvous was just serendipitous. These lovely people had quite a gamut of delicious treats for me to choose from but after wavering back and forth I made the executive decision to go with there signature treat – the cinnamon snail ( aka a vegan cinnamon roll) and some deliciously yummy coconut milk iced coffee. It was fantastic! You could not even tell it was vegan, taste and texture the same as a yummy cinnamon roll anywhere. My only nitpicky complaint would be that I would have loved it warmed up a little bit, but that could just be a personal preference of mine. The iced coffee was out of this world and I definitely want to catch up with them soon to sample more goodies! Oh and also worth noting that they had some incredible looking gluten free treats on the truck as well. So follow @veganlunchtruck on twitter and stop by and indulge in some vegan goodies when their in your hood! Then, let me know what other amazing things you recommend from them and I’ll be sure to test them out when we meet again!

Strawberry Vanilla Vegan Protein Shake

Yesterday, I had an amazing morning running the Damon Runyon 5K for Cancer at Yankee Stadium. My friend Julie and I raised money for cancer research and got to enjoy the exhilarating 5K course around Yankee Stadium, including two laps on the actual warming track right on the field. I had a blast and boy was I a ball of sweat when we finished! It felt great! However as soon as I got home (and after I jumped in a shower) I decided to whip up a protein shake for myself to hold me over till my early dinner plans. The random, absentmindedly made concoction came out so yummy I had to share!

THE PINK DRINK

one packet of vegan vanilla protein powder (bought at Whole Foods)

1 cup of vanilla almond milk (but you can use coconut milk, rice or soy!)

1/2 cup or so of ripe organic strawberries

1/2 a tray of organic ice cubes

Blend away!! Also, feel free to add some Truvia or agave in there if you want it to taste more like a strawberry milkshake. ;)

Hummus = Happiness

Who doesn’t like hummus?! It’s probably the biggest vegan, skinny trend to sweep across this city and I can’t do enough with this stuff! A skinny girl’s go-to snack for sure, so if your hostess isn’t supplying her own, this is a quick and easy platter to bring! Now, of course if your in a time crunch you buy some hummus from the super market and put it with some freshly chopped veggies but if you have a few minutes I suggest making your own! One of the best things about parties is that it really gives you a chance to let your friends try something new and a little off the beaten path. So bring one classic stand by (like a roasted red pepper or garlic hummus) and then give my mint and pea hummus a whirl as well! It’s a surprising and refreshing spread for your fourth of July BBQ.

MINT & PEA HUMMUS

Bring three inches of water to boil in a sauce pan and then add one pound of fresh peas and cook until just tender! Now drain them and cool them a little before adding them into your food processor. Combine with a third of a cup of tahini, a fourth of  a cup of fresh mint leaves and puree only until chunky-smooth. Add a pinch of kosher salt and your set! I like to garnish it with a little mint leaf in the middle.

GRILLED ZUCCHINI WITH PARMESAN PESTO

These little babies are one of my absolute favorite party treats! They’re both healthy and delicious, so no one’s going to have anything to say but “Thank you!” for bringing them. ;) Prepare them at home on your grill or bring the pesto mixture and your sliced zucchini and prepare them fresh on your friend grill! They’re so easy you can prepare them in minutes.

GRILLED ZUCCHINI WITH PARMESAN PESTO

Combine a cup of basil leaves, a clove of garlic,  and a quarter cup of toasted pine nuts in a food processor, until well blended. Now, slowly pour a half cup of olive oil and 3/4 cup of grated parmesan cheese and pulse your food processor again. This pesto should be very thick.  (Feel free to season with salt and pepper to taste)

Thinly slice 6 zucchini length-wise and lightly brush them with olive oil. Again, feel free to season with a little salt and pepper here.    Place them on the grill till they are tender and marked on both sides. Then, let them cool. Once cooled, spread one tsp of the pesto mix on one side and roll them up. Secure it with a toothpick.
