My Favorite Salad!

myfavsalad

After a month of hotel living and room service/take out eating, I could not wait to get back to NYC, my apartment and my kitchen! My body was craving something delicious, fresh and healthy. Yes, your body will actually start CRAVING that after you feed it too much heavy, restaurant-y food! I didn’t eat like a total heathen, I mean this is ME we’re talking about but fair enough to say I had a couple more cocktails than usual and indulged my love for mexican food more than once while on the west coast. So first night back and all I can think about is making a salad! Seriously, starved for a salad with home-made dressing for a change. Now, don’t get me wrong, I can not wait to start making some season fall dishes, but it was almost 80 degrees in NYC when I got back (total bummer for fall-obessed me) and so I thought it fitting to have my favorite salad just one more time before pumpkins, cranberries and apples take over my culinary life. Spinach, strawberries and brie, it’s a little naughty but very nice, all of my favorite things combined to make a very easy, simple and delicious salad. Enjoy!

MY FAVORITE SALAD

SALAD

2 handfuls of baby spinach

5 small strawberries, sliced

small handful of crushed walnuts

5 slices of brie, chopped into fourths

DRESSING

1 tbsp dijon mustard

2 tbsp balsamic vinegar

1 tbsp olive oil (I used basil infused)

pinch of salt

1 tbsp of fresh strawberry (or any kind of berry) preserves

Strawberries and Cream Cupcakes

I made these delicious morsels yesterday for my boyfriend’s birthday and they turned out ah-mazing, if I do say so myself. Now, if your New Yorker, you should be ordering them online and having a fresh batch delivered to your home office, but if your an out of towner, I’ll let you in on a few tips so you can play at home!

strawberry secrets

Well first of all, whenever I’m making a fruit infused cupcake I always use fresh organic fruit. Ripe, fresh strawberries chopped up are the heart of this fabulous treat. I puréed about 3/4 of the pint of strawberries in my blender and added it to the vanilla vegan cake batter base. With the remaining 1/4 I chopped into small pieces and folded it into the tofu cream cheese icing. The icing just tastes incredible and it’s so simple! It tastes just like a strawberry fribble from Friendly’s, for those of you who know what that is.

Secondly, I found this amazing strawberry infused apple sauce that I used instead of oil to not only add some moisture and strawberry flavor to the cake but it also makes the cupcake a bit lower in fat and cals by eliminating the oil!

So there you have it! Two easy steps to change your plain vanilla cupcake recipe into an adorable strawberries and cream creation! Play around and enjoy!

Strawberry Vanilla Vegan Protein Shake

Yesterday, I had an amazing morning running the Damon Runyon 5K for Cancer at Yankee Stadium. My friend Julie and I raised money for cancer research and got to enjoy the exhilarating 5K course around Yankee Stadium, including two laps on the actual warming track right on the field. I had a blast and boy was I a ball of sweat when we finished! It felt great! However as soon as I got home (and after I jumped in a shower) I decided to whip up a protein shake for myself to hold me over till my early dinner plans. The random, absentmindedly made concoction came out so yummy I had to share!

THE PINK DRINK

one packet of vegan vanilla protein powder (bought at Whole Foods)

1 cup of vanilla almond milk (but you can use coconut milk, rice or soy!)

1/2 cup or so of ripe organic strawberries

1/2 a tray of organic ice cubes

Blend away!! Also, feel free to add some Truvia or agave in there if you want it to taste more like a strawberry milkshake. ;)

SUMMER STRAWBERRY SALSA

I absolutely love using fresh fruit in as many ways as possible in my summertime recipes so it’s not exception that I decided to give this Strawberry Salsa recipe I found in Family Circle a whirl. My go to summer salsa is usually a pineapple mango (which I promise to post soon) but this Strawberry Salsa really spices it up! You can just dip some toasted pita chips or use to top of some grilled tofu or fish, either way it’s a delicious summertime touch to your table!

STRAWBERRY SALSA

1lb of strawberries (hulled and diced)
1/4 cup thinly sliced scallions
1 jalapeño (seeded and diced)
1/4 cup cilantro (chopped)
2 tbsp fresh lime juice
1 tablespoon agave syrup
1/8 tsp salt

Gently mix the ingredients together and enjoy which ever way you’d like!

Strawberry Banana Muffins

I found this fantastic recipe for strawberry banana muffins on Peta.org! They have a ton of great vegan recipes that you can give your own spin to when you make ‘em at home! Strawberry-Banana has got to be my favorite flavor combination so I could not resist these little babies!

Strawberry Banana Muffins

3/4 cup light brown sugar

Egg replacer equivalent of 2 eggs

1 tsp. vanilla extract

3 ripe bananas, mashed

1/2 cup melted margarine

2 1/4 cups of flour

1 1/2 tsp. baking powder

1/4 tsp. baking soda

1 tsp. cinnamon

pinch of salt

1 cup chopped strawberries

Preheat your oven to 350 degrees and line your muffin pan with liners. In a bowl, whisk together your brown sugar, egg substitute, vanilla, and bananas. Next, add your margarine. In a separate bowl, combine the flour, baking powder, baking soda, cinnamon, and salt. Now gently, fold the berries into the flour mixture. Add your first bowl in, and stir until just combined. Fill the cups just a little more than half way and bake for about 20 minutes! Enjoy! These are a lovely breakfast treat with some tea or soy milk!
